-it can evenly suspension the protein,mineral,fruit pieces and flavors like coffee or cocoa,you will not even realize the gellan gum is there.
-also it can prevent separation during the product's shelf life (for example, with gellan gum yogurt not runny or lumpy when you open the bottles.etc)

Semi-skimmed milk 82.85
Sucrose 16.00
Milled coffee 1.00
CINOGEL Low Acyl Gellan Gum 0.10
Xanthan gum 0.05
Preparation:
Blend together sucrose,milled coffee,Low Acyl gellan gum,and xanthan gum.
Add to milk and agitate. Heat to 85℃.then continue stirring.
Remove the coffee flavored milk from the heat and aerater with a hand held electric fan for 120 seconds.
Deposit into suitable containers and allow to cool,the resulting product is a gelled product which can be consumed following shaking to break the gel matrix.
