In the beverage industry, Gellan Gum can be used as good transparent suspending agent due to excellent fluid gel properties.
3.CANDY
Gellan Gum can be used in the confectionery industry and behave as excellent gelling agent due to excellent gel forming properties to get desired texture with excellent heat resistance., also the simplicity of processing will bring more convenience to confectionery manufacturer.
4.DAIRY BEVERAGES
The heat stablity and low hot temperature viscosity of Gellan Gum are advantageous for use in neutral PH dairy beverage subjected to HTST and UHT treatment.
5.DAIRY FOODS WITH FRUIT PULP
Gellan gum is recommended as a suspension agent in milk beverages, vegetable protein drinks, fruit juice and so on. Its suggested dosage is 0.02-0.05%. It can also be combined with other hydrocolloids to give different textures and mouth feel.
6.ICINGS/FROSTINGS/GLAZES
Gellan Gum can be used in high solids products, Decorative icings, frostings and glazes for baked goods consist primarily of sugar and water, with other optional ingredients such as fat, color, flavor, air, emulsifiers and milk solids. being similar to agar, gellan gum has been tested in a number of different formulations and found to be useful. Benefits obtained from gellan gum include good shelf stability, moisture retention, spreadability, sheen, texture and flavor release.
7.JAMS AND JELLIES (gellan gum Manufacturer, supplier and solutions provider
As a promising alternative to HIGH METHOXYL PECTIN/LOW METHOXYL PECTIN/K-CARRAGEENAN,Gellan Gum is ideal for the formulation of non-standardized jams and jellies, in particular increasingly popular fruit spreads containing reduced quantities of sugar. It offers robustness during processing, provides good product stability during transportation and storage, and through its characteristic gel texture and low-concentration requirement, creates products with excellent taste and appearance.
8.JUICE
Gellan gum can provide added benefits to beverages, by using gellan gum fluid gel technology, good suspension at a low viscosity can be achieved.
9.PERSONAL CARE AND ORAL CARE PRODUCTS
In personal care products, such as sunscreens, lotions, and mild hair conditioners, gellan gum has been used as a structuring agent rather than gelling agent, providing body, stability, and pleasing skin feel.
Typical applications as following:
Hair care products.
Creams and lotions.
Suntan lotioins and sunscreens.
In toothpaste formulations, gellan gum is advantageous for its binding properties and its gel-like texture. It produces a reversible, not-stringy,ture-gel structure in many types of toothpaste formulations.
Features of gellan gum in toothpaste:
*low use levels(0.025%-0.25%)
*short,not-stringy flow even in low-water formulations
*excellent stand-up
*reversible gel-like structure
*gel structure will not melt even at high temperature
*low viscosity contribution during toothpaste/gel preparation
*delayed gel structure over several hours to 24 hours after preparation
*excellent flavor release allowing lower flavor and sweetener levels
*excellent stability to enzymes,PH,and high shear
*compatible with many actives such as tartar control salts and anti-plaque agents
*fast break-down in mouth
10.PET FOODS
Gellan gum, it can be used in canned pet food for gelling purpose. It can increase yield, improve texture and slice-ability, improve moisture retention with excellent flavor release.
11.PHARMACEUTIAL USE
Gellan gum can be used to produce easy-to-swallow solid dosage forms, such as gels and coated tablets, and to modify the rate of release of active ingredients from tablets and capsules.
12.WATER JELLY
In the food industry, gellan gum can be used as suspension agent due to excellent fluid gel properties. Also it can be taken as gelling agent with excellent heat stability.
benefits:
Sparkling clarity
Faster suspending time
Good gel strength
Outstanding flavor release
Excellent acid / heat stability
Easily combined with other hydrocolloids

13.SPECIALTY MEAT
Gellan gum can be used in meat processing, includes injection, roll and sausage. It can increase yield, improve texture and slice-ability, improve moisture retention with excellent flavor release. the water holding capacity is much higher than carrageenan and can save more cost for meat processing due to the relatively lower adding dosage.
14.PLANT PROTEIN DRINKS
Gellan gum for use in stabilizing acid or neutral plant protein based beverage to keep plant protein suspended in the beverage.
Benefits:
Good suspension power
High setting point
Low protein reactive
Low calcium reactive
Acid stable

15. AIR FRESHENERS
Gellan gum can be used for air freshener gels of crystal clarity. The high melting temperature of these gels make them suitable for use in hot environments, such as cars.
16.PLANT TISSUE CULTURE AND MICROBIOLOGICAL MEDIA
Gellan gum can be used to formulate a suitable growth matrix for most clinical and non-clinical organisms. Agar is currently the gelling agent of choice for plant tissue culture. However, the presence of impurities or inhibitory factors (including sulfur) in agar can adversely affect growth. Gellan gum offers a promising alternative to agar in this application because of its purity. The similarity between agar and gellan gum has led to the gellan as an alternative to agar for microbiological media. gellan gum can not only replace agar in many routine media applications, but can also give a higher degree of cell growth in certain situations.
Ease of Processing
• Gellan gum disperses and hydrates easily in either hot or cold deionized water, forming viscous solutions in cold distilled water.
• In the presence of soluble salts, Gellan gum can be used to provide high gel strength at low concentrations (normally at approximately half the concentration required for agar).
• At high temperatures, the low viscosity of Gellan gum solutions facilitates pipetting, pumping, and pouring upon cooling, the solutions gel quickly and uniformly.
• Gellan gum is able to withstand normal autoclaving conditions.
• Gellan gum is generally resistant to enzymatic degradation.
• Gellan gum itself is chemically inert to most biological growth media additives (additive must be heated to just above gel point before incorporation).

Quality of Microbiological Media Prepared with Gellan gum
• Gellan gum gels have proven to be a suitable growth matrix for a wide variety of microorganisms, including those traditionally cultured on agar plates as well as other species not easily grown on other substances.
• Gellan gum gels are exceptionally clear, making them an excellent analytical tool.
• Gellan gum gels have essentially the same shelf life as agar gels.

Advantages of Gellan gum Compared to Agar
• Gellan gum may be used at approximately half the use level of agar
• Gellan gum is produced by a tightly-controlled fermentation process, has consistent product quality. It is unaffected by the vagaries of natural conditions which affect the basic properties of agar.
• Gellan gum gels are remarkably clear in comparison to those formed with agar.
• Gels prepared with Gellan gum set faster than those made with agar. In microbiological applications this reduces plate preparation time.
• Gels prepared with Gellan gum are stable at high temperatures. In microbiological media, this supports incubation required by thermophilic microorganisms.
• Gellan gum contains no contaminating matters (e.g., phenolic compounds) as those found in agar that are toxic to certain sensitive organisms.
