30 g of CINOGEL Low Acyl Gellan Gum hydrated in 150 g of orange juice, and heated to boiling in a microwave. 430 g of orange juice heated to about 55℃;then combined with the microwaved mixture and stirred.
The combination was split into two equal portions. The first half of combination was allowed to set while cooling to room temperature without mixing,the second half will be sheared while cooling to room temperature.
Both halves stored at 5℃ overnight, the first half which allowed to set without mixing gelled with a good cuttable texture,the second half which was sheared foamed and stabilized with a mousse type texture.
